It’s secret-stealin’ time! February 1, 2010

I held off for a while on this one. It’s the recipe Jon and I came up with for R-R-R-RIBBBBBBBS. We’ve got a prospective taker on these for a possible catering job in the future, for a rib-loving man who’s retiring.  These ribs are oven-baked, not-your-mama’s boiled-and-doused-with-VH-sauce, and they’re fall-off- the- bone.  The sauce is unlike any barbeque sauce I’ve ever had, despite the common ingredients. So, feel free to steal this recipe. It’s a humdinger, I daresay. The secret ingredient is Cola.

No, it’s Cola, and the joy of braising.
And, maybe the pork-infused barbeque sauce. HAH!
Oh, by the way, we actually are starting up a catering business, and have had several jobs in the past while, except now, we’ve got a name! A name, and labels that are stickers, and business cards! The name is Cocodrie, which is Cajun slang for alligator, which suits us both. Jon likes reptiles. I like Cajun stuff/food/stuff. My very gracious aunt has also been giving me some cake-decorating lessons, and lots of helpful tips about getting a catering business up and going, since that is her expertise, AND sent us home with about 5 huge boxes of cake pans, recipes, all kinds of bakeware, and knowledge. So THANK YOU to Aunt Marie!  In these somewhat fruitful efforts to make cakes, my father received a birthday cake with a very poorly piped cockatoo on it. I’m just rambling at this point though. Here’s your recipe.
(I’m sorry there are no pictures – I can honestly say they were not really with us  a long enough time for me to clean my hands of barbeque sauce and grab a camera)

Metalocalypse Ribs

(because the sauce, like Nathan Explosion’s Explosion Saucea mustardy North Carolina blend with a hint of cilantro – it’s good on it’s own)
Oh my god, I love anyone who understood that reference. Moving on!
6 racks pork side ribs
2 Tbsp yellow mustard
1 tsp chili powder
3 Tbsp paprika
2 tsp garlic powder
1 tsp onion powder
1 tsp mustard powder
1 ½ Tbsp balsamic vinegar
1 Tbsp Worcestershire
¾ tsp chili flakes
1 ½ tsp salt
1 tsp black pepper
3/4 tsp  liquid smoke
1 can cola (Coca Cola is best, I’m just saying…)
Preheat oven to 300 fahrenheit. Using a paring knife and either your fingers or some paper towel, peel/rip off the clear, thin membrane off the bony side of ribs. If you don’t do this, I promise you, you’ll be a whole lot more grossed out when you go to eat the ribs…  Discard that stuff, you don’t want it around. If you feel like trimming the fat, go ahead. I personally don’t like to. Fat is flavour, blah blah blah. You know my thoughts. Next, in a braising pan (roasting pan, I don’t care, use whatever will fit a lot of ribs), combine all ingredients except cola and liquid smoke, and rub into ribs. Be pretty liberal about it. Next, put a few splashes of the liquid smoke onto the ribs (I estimate 3/4 tsp). Pour cola in the sides of the pan, try not to disturb the rub portion. Cover pan with a lid or aluminum foil, and bake for an hour and a half.
Next, pour the braising liquid that remains in the pan into a bowl, and add to it:
½ tsp celery seed
8 drops liquid smoke – ½ tsp?
1.5 tsp salt
¼ tsp chili flakes
1 cup ketchup
1/3 cup balsamic vinegar
1 tsp pepper
2 Tbsp Worcestershire
You have just made some kind of tasty barbeque sauce. Congratulations. Pour it over the ribs!
Bake this again at 325 fahrenheit, for about an hour. I suggest covering for the first 25 minutes or so.
Now the ribs are ready to eat. Use lots of napkins, moist towelettes, whatever you prefer. I suggest eating it with coleslaw or some form of marinated potato salad. Do not anticipate leftovers. Anticipate gratitude.
